Delete or update the RespiLens `jsonschema`

We have two styles of JSON: timeseries and projections. There is a .schema.json file to describe each, but they are likely out of date.

1. determine where, if any place, we actually use these files
2. either update them to be current with all possible structures (note, difference since addition of peak views, metadata keys we want to make non-mandatory, etc.), or delete them if we actually don't use them in a meaningful way.
