Proposal: Consolidate dependencies into workspace

I noticed several of the workspace crates depend on serde, serde_json, tokio and a few others with the same version. I'd like to centralise these in the workspace Cargo.toml to make maintenance easier. Is this a change you'd be interested in? If so, I'm happy to submit a PR.

Somebody already has a fork with these changes that will be merged in later so no need. Thanks though.

Ahh, I see just saw that it hadn't been PRd yet and thought it would be a good way to start contributing to the project
