update-versions removed from Makefile

This was part of the #8249 uv migration and I'm not sure if the intention was to use uv to update pyln package versioning, but we left the downstream update-pyln-versions, update-reckless-version and update-dot-version commands in the makefile with no way to trigger them as far as I can tell. If this command was deleted unintentionally, I can open a PR to restore it, but wanted to make sure I'm not missing something. I didn't see any changes to the documentation around this (doc/contribute-to-core-lightning/release-checklist.md). @king-11 is it okay to restore the previous update-versions command, or was there an intention to refactor this?

I see what you mean I removed update-versions in the change we should introduce it back I think I missed on having a way for reckless, dot and docs to be updated. The intention should have been just removal of update-poetry-lock from the command
