Explanation of Change

#95955 hides the outdated letter avatars in the avatar selector behind the defaultLetterAvatars beta, so users not on the beta no longer see the letter option when choosing a custom avatar.

The help site article Account-Settings.md still told users they could "Select an avatar or letter." This PR removes the "or letter" wording in the two places it appeared so the docs match what the general user base now sees.
