Remove Polygon zkEVM support due to network sunset

Polygon Labs has announced the sunset of Polygon zkEVM Mainnet Beta and the network is being phased out.

As a result, we should remove all Polygon zkEVM related configurations, chain definitions, token metadata, assets, and any associated code that is no longer needed.
