Auto update copyright year to match the date of the commit being used

The copyright year used in the docs (html footer, pdf front page) is configured in conf.py.
Right now it is hard coded.
To ease maintenance, it should use the year of the commit date being used to generate the docs.
We expect to always be used in a git repo but just in case use a fallback of $(date +%Y)
