Smart Contract guide is outdated (OpShin now supports PlutusV3)

With the release of OpShin v0.27.0, OpShin supports PlutusV3 and the validator signatures have changed. The tutorial could for now just mention that the tutorial is for Opshin < 0.27.0 and should eventually be adapted.

I can do that a some point, just logging this here as a todo.

Note that book.opshin.dev and the examples in the OpShin repo are updated, which should help
