Make Session 8 exercise more general

Currently the exercise is to perform interpolation and write the reusltd to a Sofistik input file.
This was created for structural enigneers as an example from a project. 

However, since the course is now for a wider COWI audince, **the exercise should be changed to not mention Sofistik and interpolation results should be written to a standard txt file.**
