I am planning to lock down my CA using DNS CAA. The CA I used was the default one selected by acme.sh as such I am wondering if acme.sh will keep the CA unchanged on renewals since, if it is locked using DNA CAA and it is changed by acme.sh, then it will fail to renew with another authority.

Please upgrade to the latest code and try again first. Maybe it's already fixed. acme.sh --upgrade If it's still not working, please provide the log with --debug 2, otherwise, nobody can help you.
