I am looking for a declarative way of defining datasets based on Iceberg tables in the Iceberg REST Catalog, and I came across this project. Apart from the schema definition I am also looking for an extensible format so that other things can be defined, e.g. data quality checks, PII columns, tags, and other governance related metadata.
Do you think schemata could work for such use case?

Yes, totally. The next version we are about to release has built-in support for tagging, data quality, auto PII detection/ manual marking, and an approval process that is tightly integrated with the Github PR process.

There is no integration with the Iceberg catalog, but it's trivial to add. If it's okay, can you please create a sequence of issues and the expected behaviour of it?

Yes, let me add the roadmap in a couple of days. We want to add the ability to define a Business Object definition by the team that can map to tables, etc.
