I have a MX Anywhere 3S connected via Bluetooth on 6.18.3-arch1-1 x86_64 and I have no problems setting DPI or SmartShift values with the hid-generic driver.
I believe the problems you are experiencing are because of the hid-logitech-hidpp driver and the documentation overstates the severity of the problem.
