The error code 500, is typically an error/warning that shows when there is something network related going on. It can be anything from wrong IP address, over a bad network cable to a Camera that is defined in the Protect App, but not Online.
Things to try:
Open the UniFi Protect App, and check that every thing looks fine here. Are all Cameras connected?
If you just created the Local User to be used with Home Assistant, then sometimes a restart of your UniFi device solves the issue.
