It took my Tex-Mex skillet chili recipe and turned it into a yarn worthy of Uncle Remus. Very cool!

1 lb ground beef
half of an onion finely diced
16oz can dark red kidney beans
16 oz can crushed tomatoes
3/4 cup minute rice
3/4 cup water
2 cups shredded mild cheddar cheese
garlic powder to taste
chili powder to taste

Brown the ground beef. Drain off the excess fat except for a tablespoon. Saute the onion. Add garlic powder and chili powder and stir it into the meat mixture. Add the beans and crushed tomatoes. Add more garlic powder and chili powder if desired, and stir. Add the rice and water. Reduce heat and simmer for 20 minutes. Top with cheese and cover until melted. Serve with dinner rolls or corn bread.
