update docker compose examples

make three new compose files for the deployment guide compose files:
- https://github.com/digitalcredentials/docs/tree/main/deployment-guide/docker-compose-files
- update with latest images
- update to demonstrate use of claim page image
- possibly make different files to demonstrate configuration of mongo status implementation
- look through other repo docs and replace any. compose examples with links to these examples so we have fewer examples to maintain
