full_stack_example is several major versions behind #262
Description
https://github.com/elastic/examples/tree/master/Miscellaneous/docker/full_stack_example appears to be configured for version 5.5. The current version is 7.3.2. Several of the config files are no longer accepted and the script to set passwords does not work. There are problem several other issues as well.
