DELETE requests are not recorded by the gateway

When the MCP Client wishes to terminate a session, it issues a DELETE /mcp request to the MCP Server.

With #29 we support proxying these requests through the gateway, but we don't yet record any information about the event itself.

Therefore, nothing actually shows up in the gateway UI or activity logs
