How to change the color of hotkey here from pink to yellow? I can barely see pink on black.

Yes, that's bg+ color.
(If you want to change bg color, bg+ color also set with the same color.)

$ git branch | fzf --bind load:jump --color=pointer:yellow,bg+:#000000

Background is fixed, but there are still foreground stripes.

I experimentally changed fg+ to #999999, but it would be better to tell it somehow to use fg color.

Right, I think matching fg and fg+ with the same color is the solution.
Kind of rough approach, but here's my current .fzfrc.
It's literally no color scheme.

bg,bg+ and fg,fg+ colors from .xcol.
And each pair using same color like your saying.
And .xcol has .Xresources colors.
