Description

Our UI colours across both dark and light UI are inconsistent and need to be simplified.

Context

This piece of design-debt work is necessary to ensure kedro-viz UI is in a good and consistent state, and will make other pieces of work like customisation a lot simpler and easier to execute in the future.
