Does noise include background noise from buying and selling, music, air conditioning current, etc.?

Hello, it depends on the model, the larger ones are more selective in cancelling noise. Generally speaking it struggles with music when it contains vocals or instruments in the same range as voice, however if the music is coming from the device running the model then AEC can be used to remove it.

The only way to really know how it performs in a particular scenario is to evaluate it with samples from the hardware and location you plan to use it and if it performs poorly then it may be possible to modify the training data to fix it.
