Update PHP and omp

Hello, I was trying to use your docker image to install omp but I see its a bit outdated, is there an easy way to update it. Was trying change the php version to 8.1 and omp to 3_3_0-14 but was running into some problems when installing the packages with composer. Any Chance you could help?
