Tagging commits with versions and pinning nix pkgs

Hello there! Thanks for building and maintaining this.

I've started using these packages recently and had to use a previous version to the current one due to a tool not accepting some of the new API of the library.

I noticed the nix packages version is not pinned, so although I used the commit that is pointing to an older version, I was getting python configuration errors due to a change in API between a year ago and now, since the flakes/shells point to nix's unstable channel.

Tagging the commits when esp-idf version changes would also be super useful for the sake of being able to easily mention them in dev flakes instead of using commit hashes as well :)

flake.lock pins the nixpkgs version doesn't it?

If you use nixpkgs-esp-dev as a flake, then nixpkgs should be pinned to a version that works. But if you use it otherwise, it uses your system's nixpkgs which may be an incompatible revision. I personally just use flakes, and that is the primary intended way to use this. I don't have the time to look into adding a pinning mechanism outside of flakes, but I think it would be possible to do something simple yourself locally.
