Current nixpkgs-unstable, and upcoming stable release 26.05 will remove python 3.10 from nixpkgs, which breaks this flake

As per title, python 3.10 get removed in next stable release as its EOL.

I have tried to use nixpkgs unstable and remove the python310 reference, but this results in python build errors, and i realize i am way over my head in trying to fix this myself.

I dont know the steps needed to figure out how to update this properly, i am a fairly green nix user, and also completely new to esp-idf.
