Prune all Anaconda versions from all infra

Objective

• Anaconda changed the license, which means it cannot be used anymore for free and various academic HPC sites got nasty bills.

• Delete all Anaconda versions from all stacks

• Install at least one version of a recent fork/version/alternative like the miniforge installer, which defaults to the free coda-forge channel.
