[MongoDB] Add query text (db.query.text / db.statement) in activities

The MongoDB instrumentation is not reaching activities associated with the db.query.text or db.statement (deprecated) tags.

Symptom

The new MongoDB instrumentation does not allow for the inclusion of the query string in the activity.

Expected Behavior

There should be an opt-in option to enable the addition of the query text to the activity.

• OpenTelemetry Automatic Instrumentation version: 1.10.0
• Operating System: Linux
• .NET Version: .NET 9
