Fix colision in litellm versions when instaling this plugin together other ai xblocks

This plugin has a dependency on Litellm which in turn installs openai.

Two known xblocks that use AI also have some kind of requirement about this:

• xblock-ai-evaluation -> litellm

• ai-coach-xblock -> openai

The goal of this issue is to try to install the xblocks alongside the framework and find out where the limitations are. If possible contribute code either to this plugin or the xblocks to make them more compatible. If fixing the dependency hell is not possible we must at least document it and suggest to instance operators how to proceed.

This is based on the belief that organizations interested in using AI will probably explore the framework and the xblocks at the same time.
