Run tests against kryoptic main

Currently, we run tests against the Fedora packaged version of kryoptic, which is some months old:

We would like to get the new version released, but the code is moving fast and it might be more viable to build the kryoptic from source for the CI as we are hitting the new functionalities (#307, #310, #306) we are unable to test.

We have kryoptic building in CI of pkcs11-provider in https://github.com/latchset/pkcs11-provider/blob/main/.github/workflows/kryoptic.yml so it should be quite easy to adjust for this CI.

Discussed in #306 that it would be good to have two targets for kryoptic: standard and fips one so we can properly test also the validation API.

The FIPS version will be a bit more complicated, but should be doable too and with github caching, it really does not take that much of a time.

Seems like a sensible idea, as long as we can track which kryoptic version we are building and not always build main!

I would also be in favour of making kryoptic our "default" PKCS11 library to test with (in CI and READMEs) and put SoftHSM second (or completely deprecate?)

We are getting a new kryoptic release so it migt not be needed. And I do not expect that much of a development from now on.
