Support for Generic OIDC providers

Hi, I see that Pelican currently supports many OAuth providers, but I don't see an option to generic OIDC providers. I am trying to integrate it to use PocketID (which should work very similar to how Authentik work and Authentik is supported)

Is there any way to connect to an OIDC provider like this currently? Would it be difficult to add?

I think we could just have 1 option there for OIDC and let the user provide all the info in the UI.

additional providers can be easily added (by plugins), as long as socialite supports the provider.
A "generic" provider won't be added.
