Fix stale phpredis signatures in functionMap

42 Redis, RedisArray and RedisCluster entries described parameters from
phpredis 4/5 that no longer match phpredis 6 (and the phpstorm-stubs):
wrong parameter count, optionality or variadics. Since the functionMap
wins over the stubs for parameters, this caused false positives when
overriding these methods, e.g. in Symfony's RedisProxy and
RedisClusterProxy, and wrong parameter types assigned by position,
e.g. float $member in Redis::georadiusbymember().

The parameter lists now follow phpredis 6.3; return types and
parameter types of the kept parameters stay as they were.

Also removed the old alternative variants (Redis::del'1 etc.) and
entries for methods that phpredis 6 no longer has.
