Hello,
On a rabbitMQ server 3.11.7 version querying /api/queues endpoint completes with "Empty reply from server" message when vhost has more than 20k queues , after 60 seconds . E.g:

On systems/vhosts with smaller amount of queues it does work properly.
Running rabbitmqctl list_queues also works :

rabbitmqctl list_queues --vhost  /prd | wc -l
26043

Is there any method/settings which can be used in order to have the API endpoints return the data ?

RabbitMQ 3.11 has been out of support for a long time. Lots of performance improvements since then, that may have resolved the issue.
