Make documentation specific to version

At the moment documentation is generated upon push to main.
Only latest version is maintained.

Instead we should generate documentation in a version-specific manner.
We should also keep previous versions.

The way TypeScript does version-specific is via release notes: https://typescriptdocs.com/release-notes/TypeScript%205.8.html.

Which is in my opinion the best/most convenient/most relevant approach from an accessibility point of view and to help users understand what has changed.

I would recommend release notes starting with v1.0. For historic versions, considering the code is self documented and accessible for users directly from within their IDE of choice, we are providing an excellent experience already.

1. Release documentation action to be triggered on library version release
2. Start documenting versions via release-notes
