Add tests for `coverage` and `profiler` in maat

Preferably on projects that already do use those (finding them in the ecosystem before)

We have to have separate runs for those tools (from regular maat test runs) since they require other build profiles (debug, various mappings generation, etc) and those might affect the runtime/timings. 

We should be able to verify correctness of results rather than the performance, on cairo bumps.
