[HIGH PRIORITY] Document V1 API clearly

For now we just published the doc from the postman collection we use for testing. That doesn't have any text.

We need to explain things very clearly especially the mobile_login and signup calls, when they should be called and how they work.

Also the fact that all the other endpoints require auth_token to be passed and how to do it.
