Add support for packaging Stoat Self-Hosted in Nix/Nixpkgs or Flake

Is there interest in supporting a Nix/Nixpkgs package or a Flake for Stoat Self-Hosted?

Packaging it for Nix would allow reproducible builds and native deployment, creating an easier self-hosting experience for any Linux distro, especially for NixOS users.

I don't think we're opposed to that, depending on the amount of ongoing maintenance work required. We'd certainly love to see a PR with an implementation, so we could better review it.
