fix: keep late-sdk as primary package name for release workflow compatibility

The release workflow builds late-sdk first, then swaps to zernio-sdk. Keep name=late-sdk in pyproject.toml so the dual-publish flow works. The zernio-mcp entry points are included in both packages.
