# 鲫鱼豆腐汤的做法
## 必备原料和工具

* 水 -- 2L
* 热心摊主处理好的鲫鱼 -- 400g
* 豆腐 -- 350g
* 葱 -- 一段
* 姜 -- 1 拇指块
* 料酒 -- 1勺
* 盐 -- 适量
* 枸杞 -- ”适量“
* 铁锅 -- 一口
* 食用油 -- 适量
* 金针菇 -- 视个人喜好

## 操作
1. 鲫鱼杀洗干净,腹部的黑膜一定去干净,两面斜切两切,洒少许盐腌十分钟左右。
2. 姜切片,葱切段,豆腐切小块入开水锅中焯烫一下捞出备用。
3. 锅中倒油,放入姜片、鲫鱼煎至两面变黄。
4. 倒入两大碗清水,没过鲫鱼即可,放入料酒、葱段大火煮开,撇去浮沫,保持大火炖十分钟左右。
5. 炖至汤色发白,放入豆腐煮开,转小火慢炖5、6分钟。
6. 放入枸杞,调入适量盐、洒入葱花或香菜。

* **注:** 所有材料按个人爱好与食量适量增减,处理食材时有条件带上一次性手套,使用之前生蔬食材建议提前洗净放置一旁保持卫生。
