feat: create org entities, document export, and Redis caching layer
e0a8e5e 
- Create Organization and OrganizationMember TypeORM entities (CodeGirlsInc#802)
- Implement document export as PDF (pdfkit) and Excel (exceljs) (CodeGirlsInc#801)
- Cache Stellar verifyHash() results in Redis (CodeGirlsInc#800)
- Configure CacheModule and cache GET /documents/:id/risk results (CodeGirlsInc#799)

Closes CodeGirlsInc#802, CodeGirlsInc#801, CodeGirlsInc#800, CodeGirlsInc#799
