Sample data is not supposed to be real data, just to showcase that you can put any tag. Besides, "neighbors", "friends" and "family" are all valid tags as they can each of these to the managers or the staff of the restaurant.

I disagree with this categorisation as sample data is supposed to show an example of how the application might be used by your target users, in this case restaurants who are managing their customers' bookings. It does not need to be real data but it should show an example of how real data would look like in the application. In this case, restaurants would not use personal identifiers as tags for their customers as it is firstly a professional setting. Secondly, multiple staff in the restaurants would be using this application to manage bookings so tags such as "neighbours", "family" or "friends" would not be applicable. Using tags such as "regular", "vegan" or "noisy" could help show restaurants how they can use this tags feature in the restaurant setting.
Furthermore, the sample data has no bookings being made, so it does not showcase this key feature of this application and instead the user opens the application to find an empty half of the screen under the bookings view.
