fix: update mempool E2E assertions for new response format - #17

The mempool dashboard endpoint now returns live stats under `data.live` (was `data.stats`) and adds `data.averages` and `data.platformVersion`. This is a cross-repo change — the E2E will fail until provider-platform PR #43 is merged and released.
