docs: convert headings to title case in r.example.md

This PR updates the headings in doc/examples/python/script/r.example.md
from ALL CAPS to Title Case as suggested in issue #5239.

Doesn't matter for this kind of PR. And the PR doesn't risk to be too much outdated when one or more unrelated commits are merged to main. It doesn't need to be updated from main after each commit (if done for each PR, it would exponentially increase the time waiting for CI!). We only have the option enabled for us to update PRs without waiting for authors when too old or changes that might impact a PR or merged (even if not a conflict as per say)
