Add KyaniteLabs MCP servers: DialectOS, Epoch, checkyourself

Three open-source MCP servers by KyaniteLabs, placed in the most relevant categories per CONTRIBUTING:

• checkyourself → Code Analysis & Quality
• Epoch → Project & Task Management
• DialectOS → Developer Productivity & Utilities
  Same author as mcp-video (already listed). Searched first to avoid dupes.

Fixed in the latest push. I mirrored the three README entries into their matching docs files:

• checkyourself -> docs/code-analysis--quality.md
• DialectOS -> docs/developer-productivity--utilities.md
• Epoch -> docs/project--task-management.md

I also found and fixed a DialectOS-side public install-doc issue separately in KyaniteLabs/DialectOS#169 so the submitted project's onboarding points to the release tarballs correctly.

Thanks for the contribution. With the new MCP Index flow, the category docs file is the source of truth for server listings. I updated this PR branch against the new main branch, kept the docs entry, and dropped the old README listing change where needed. This looks good to merge.

Merged, thank you for contributing to the MCP catalog. We have updated the repo so new server submissions only need to edit the relevant docs/*.md category page; the README and index data are generated from those docs.

We are also using TensorBlock resources to provide free community infrastructure around these listings: structured MCP Index profiles, install metadata, and an agent-searchable registry so MCP servers can get better exposure and be easier for users and agents to discover.
