Fixed last remaining np.string_ (fixes Numpy 2.0 np.string_ depreciated #110)
Patched code to properly read EIS obs consisting of a single exposure and slit position (uncommon edge case)
Finally added a note about citing EISPAC to the docs and readme (closes Add note in documentation about citing EISPAC #82 and closes Updating citation information in README & documentation #106)

Also disabled testing the Fido client for now while some SSL certificate issues are sorted out.
