docs: restructure navbar of ref arch & pull in Openshift to single k8s page

@theburi and I had a quick chat on what's still missing for 8.7.
For 8.8 will likely do another restructuring of the whole self-managed section but for now double link in 8.7 to the references as fake subpages of ref arch.

Also pulled in Openshift as distro of K8s on the single page to complete it.

When should this change go live?

• This is a bug fix, security concern, or something that needs urgent release support. (add bug or support label)
• This is already available but undocumented and should be released within a week. (add available & undocumented label)
• This is on a specific schedule and the assignee will coordinate a release with the DevEx team. (create draft PR and/or add hold label)
• This is part of a scheduled alpha or minor. (add alpha or minor label)

Makes sense to me - I think the double-linking/fake pages can be an awkward experience, but if we're moving in the direction to restructure that entirely in 8.8, I think this works for now.

@conceptualshark agree but 8.8 rework looks promising on changing everything up anyway.
