This will allow us to automatically update last modified timestamps from the pipeline
Now that update_resource defaults to a custom field, the expected date format has changed

We may want to scrap this for a technique that queries health checks instead. |

Add an "update date" field to resources and make a script that can update that field over the API.
This will allow ops to eventually call that script from their pipeline so that they can programmatically keep track of when each data source was last ingested.
