Replace Jest 29 + ts-jest with Vitest 4 for the cubejs-client-core package.
It's an important to align all vite/vitest to the same version across the project in yarn.lock to minimize cache usage and yarn install time. Modernize build/test toolchain from Vite 5 + Vitest 0.34 to Vite 8 + Vitest 4. Replace vite-plugin-environment with built-in define, upgrade @vitejs/plugin-react to v6 (Oxc-based), remove unused .babelrc, and fix recursive-readdir dep collision.
