Update JSON reference to have ManifestDefinition and Reader instead of ManifestStore, etc.
This adds two new JSON reference pages under https://deploy-preview-214--cai-open-source.netlify.app/docs/manifest/json-ref/ that are generated from the JSON schemas for ManifestDefinition and Reader.
