Add AI-Scan-Interceptor to Tools

Adding AI-Scan-Interceptor to the Tools section.

Open-source, self-hostable DLP gateway that inspects and controls prompts sent from enterprise networks to major LLM providers (ChatGPT, Claude, Gemini). Implemented in Go with a Squid forward proxy and ICAP-based policy engine; uses mTLS for endpoint identity; deployable via Docker Compose.

Complements existing Tools entries (LLM Guard, Vigil, Rebuff) by operating at the network egress rather than the application layer. Useful when application-layer guardrails cannot be enforced (e.g., browser-based LLM use, embedded copilots).
