docs: reconcile phase1 atproto rollout runbooks

Summary

• align the runbooks with the phase 1 ATProto rollout contract
• document the live hostname split across login, entryway, and pds
• fold rollout ordering and public-edge deployment checks into the launch checklist

Aligned the checklist wording so the ArgoCD-managed GKE service list now matches the deploy docs. The entryway/login/pds contract changes look correct, and the smoke-script sync concern did not apply because the script already validates entryway.divine.video.
