Color mapping is going GA but isn't very well documented yet (only a section about data tables). This PR adds more depth to existing content in addition to removing the technical preview callout.
@markov00 @ghudgins @gvnmagni let me know how this looks to you and suggest any improvements you'd like to see. I based myself on my own testing and some 8.11 release documents to describe the feature benefits so there may be things to add/correct.
I'll create the corresponding 8.19 PR once we're happy with the content here.
