[FEATURE] Update build script, artifacts to P3 lib ref specs

Update build script to generate src, reference folder in artifact instead of source, documentation
These changes reflects P3 library guidelines in P3 repo's wiki
Tested artifact generation with new build.yml script
Updated release artifacts: XlsReader.zip and XlsReader.txt
Tested changes in Processing3.5.4
Closes zip file doesn't follow processing library guidelines for folder structure #12
