In the latest commit (e1394ce), new docs and backend configuration using uv have been added. This resolves #380, however, there are now several documentation files with duplicated and inconsistent information about how to set up and run this project.

I've removed outdated documentation and configuration, merged similar files, and added full instructions for a local setup using uv and Python 3.13.

I've also added/updated Docker files so the whole project can be setup much more easily (while keeping non-Docker local setup instructions for those who want it).

Tested locally on Mac OS 26.3, MySQL 8.4, uv 0.10.2, and Node.js 18 for the local setup and Docker Desktop v4.60.1 for the Docker setup.
